NME is awesome.
I've had some issues with nme but it's very promising. how are you testing/exporting for ios? are you already developing on a mac?
I am developing on a Macbook. Testing on iOS I simply plug in my i-device and run the familiar
nme test ios command. If I export for a final build for the app store I have to do nme build ios, go into XCode, and export from there. You do have to do some stuff first to get a developer key (and other keys/provisioning) online in the iOS dev center, set that up on your computer, and then run your builds with those keys.
I don't think I've run into terribly bad issues with NME, but sometimes you have to work out the "right way" to optimize for the mobile devices (which do not coincide with how to optimize for web necessarily). Generally compiling to all kinds of devices works with minimal changes to get code working together, but then also supporting multiple resolutions and tweaking code that doesn't work well on all platforms is the bigger time-sink.
Edit: I forgot to say that NME results in what I've seen to be faster than (the latest) AIR.
